This pudding is all about pure comfort: simple, ingredients, straightforward steps, and a creamy, homemade flavor that doesn’t rely on gimmicks, secret ingredients, or tricks. It’s the kind of easy, delicious dessert your family will love.
In a medium saucepan whisk together 1/4 cup of unsweetened cocoa powder, 1/4 teaspoon of salt, 1/2 cup of granulated sugar and 3 tablespoons of cornstarch.
Start to heat over medium and slowly whisk in 2 cups of whole milk.
Once the milk is incorporated, add 3 egg yolks and whisk constantly until fully blended and smooth.
Once the pudding starts to thicken, add in 2 tablespoons of unsalted butter, 1 teaspoon of vanilla extract, and 4 ounces of chopped semi-sweet chocolate. Remove from the heat and whisk until smooth and glossy.
Pour the pudding into a bowl, straining it first if you want an ultra‑smooth texture. Let it cool on the counter until it’s warm, then press plastic wrap directly onto the surface to prevent a skin from forming. Once it’s no longer hot, transfer it to the refrigerator and chill for at least 2 hours until fully set.
